Earl Grey should smell like a fruit and taste like a tea. Most of it does the opposite: synthetic bergamot sprayed over broken leaf, because the flavouring is there to hide the grade. Ours starts from whole-leaf organic Darjeeling, aromatic enough to be drunk on its own, and adds natural bergamot for the lift. The citrus arrives on the nose, brightens the first sip, then gets out of the way and lets the Darjeeling finish the cup.

Brewing Guide

How to Steep

Four steps from leaf to cup — the colour tells you where you are.

2g tea per 150ml/200ml cup

Water

Water at 95°C (never boiling, which scalds). Do not cold brew this tea; bergamot needs heat to open.

Measure

2g per 150ml for hot tea, or 4g per 200ml (double strength) if serving over ice.

Brew

Steep 3–4 minutes. (Use 4 minutes if you take milk. Past 5 minutes it turns astringent due to the leaf).

Enjoy

Strain. Serve hot (takes milk beautifully) or pour double-strength straight over a full glass of ice with a slice of lemon.

What is bergamot? +
A citrus fruit, grown mostly in Calabria in southern Italy. It looks like a small yellow-green orange and is too sour to eat. Its aroma, taken from the peel, is what makes a black tea an Earl Grey.
Is Earl Grey black tea? +
Yes. Earl Grey is not a plant. It is black tea scented with bergamot. The character of any Earl Grey comes from the base leaf underneath, which is why ours is whole-leaf Darjeeling rather than the broken grade most brands hide behind heavy flavouring.
Does Earl Grey have caffeine? +
Yes, a proper amount. It is a black tea, so expect roughly a third to a half of the caffeine in a cup of coffee. It is a morning and afternoon tea. For an evening cup with the same ritual, drink chamomile.
Can you drink Earl Grey with milk? +
Yes. Steep four minutes rather than three so the base holds through the milk. Cheap Earl Grey turns soapy with milk because the bergamot is synthetic perfume. Natural bergamot on real leaf does not do that.
How long should you steep Earl Grey? +
Three to four minutes at 95°C, three for black, four for milk. Past five minutes the tea turns astringent. That bitterness is the leaf, not the bergamot, and no amount of sugar will fix it.
What is the difference between Earl Grey and Zesty Earl Grey? +
This is the classic: Darjeeling leaf and bergamot, nothing else. Zesty Earl Grey is the spiced signature version, a stronger CTC base with bergamot, cardamom, cinnamon, clove and black pepper. If you want the quiet original, drink this. If you want it loud and spiced, drink Zesty.
