How to Steep

Four steps to a delicate spring cup — respect the first-flush Darjeeling leaf.

2g tea per 150ml cup

Water

Water at 90°C. Boiling water cooks the delicate first flush leaf and turns it bitter.

Measure

2g of tea per 150ml of water.

Brew

Steep for 3 to 4 minutes. Let the spring liquor release its aromatics slowly.

Enjoy

Strain and serve hot. (Note: First-flush Darjeeling is crafted for a hot porcelain cup, not a tall glass of ice; iced serving is not recommended.)

What is first flush Darjeeling? +
The first plucking of the season, in early spring, just after the bush wakes from the Himalayan winter. The leaves are small and slow-grown, and the cup is light, floral and aromatic. It is the most sought-after Darjeeling harvest.
Why is Himalayan Breeze so pale? +
Because first flush is meant to be pale. The young spring leaf gives a light gold liquor, not the dark red of a breakfast tea. If a ‘Darjeeling’ brews dark and heavy, it usually is not first flush, or not Darjeeling.
Should I add milk to first flush Darjeeling? +
No. Milk flattens exactly the qualities you are paying for, the florals, the brightness, the delicate finish. Drink it plain, and give it your attention for the first few sips.
Does Himalayan Breeze have caffeine? +
A little, it is a true black tea, but a light one. Expect noticeably less than a breakfast cup. It suits the afternoon slot where coffee would be too much.
What is the difference between first flush and second flush? +
First flush (spring) is light, floral and green-edged, that is this tea. Second flush (early summer) is rounder and maltier with the famous muscatel note, that is our Sunlit Harvest. Try both and you will never confuse them again.
How should I brew Himalayan Breeze? +
90°C water, just off the boil, for three to four minutes, 2g per 150ml. Boiling water bruises the young leaf and dulls the florals.
