How to Steep
Four steps to a round, malty second-flush Darjeeling — with natural muscatel sweetness.

per 180ml cup
Water
Water at 95°C, just off the boil. Fresh filtered water brings out the best muscatel character.
Measure
3g of whole loose leaf per 180ml cup.
Brew
Steep 4 minutes, swirl gently halfway through. Give the fuller summer leaf its time to open.
Enjoy
Strain. Drink plain first to enjoy the grape-like muscatel note. If adding milk, keep it to a small splash.

The second plucking of the season, in early summer. The leaf is fuller than the spring plucking and the cup is rounder, malty, smooth, and carrying the muscatel note Darjeeling is famous for.
What does muscatel mean in tea?
A natural dark-grape, almost wine-like sweetness that appears in good second-flush Darjeeling. It is not a flavouring and cannot be added, it comes from the leaf, the altitude and the season.
Can I put milk in Sunlit Harvest?
A small splash works, the body can carry it. But try it plain first. The muscatel note is the reason to buy this leaf, and it drowns easily.
How much caffeine does Sunlit Harvest have?
A moderate amount, more than first flush, less than a breakfast blend. It sits comfortably anywhere between mid-morning and late afternoon.
How should I brew second flush Darjeeling?
3g per 180ml, 95°C, four minutes with a gentle swirl halfway. The fuller summer leaf needs the full four minutes to open.
Sunlit Harvest or Himalayan Breeze, which one is for me?
Himalayan Breeze (first flush) is lighter, floral, green-edged. Sunlit Harvest (second flush) is rounder, maltier, with the muscatel note. If you are new to Darjeeling, start here; it is the more forgiving cup.
