Oolong sits between green and black tea: the leaf is allowed to oxidise partway, then stopped by hand at the moment the maker chooses. Darjeeling oolong is rare, the high slopes give it a smooth, nutty profile with a mineral floor and a faint orchard sweetness. How to Steep
Four steps to a rare Darjeeling oolong — smooth, nutty and re-steeps up to 4 times.
Water
Water at 85°C. Never use boiling water on oolong.
Measure
2g of loose oolong leaf per 150ml cup.
Brew
Steep 3–4 minutes. Strain and save the leaves for up to 4 infusions (add +30s per round).
Enjoy
Strain. Enjoy hot cup by cup — the 3rd steep is a quiet favourite as the leaf unfolds.
