How to Steep

2g tea per 200ml cup

Water

Bring water to a rolling boil, 100°C.

Measure

2g of tea per 200ml of water.

Brew

Steep for 5 minutes. The colour deepens to deep indigo with time, but the taste remains gentle and does not turn bitter.

Enjoy & Experience

Strain and serve. For the show, iced: Brew hot at double strength, pour over a full glass of ice, and squeeze lemon at the table to watch the indigo turn violet!

A caffeine-free infusion of the butterfly pea flower (Clitoria ternatea), drunk across Southeast Asia for generations. It brews a startling natural indigo and flips to violet when acid, lemon, lime, is added.
Why does Mystic Blue change colour? +
The flower’s pigments (anthocyanins, the same family behind hibiscus red) are pH-sensitive. Neutral water reads indigo; add lemon and the acidity flips it violet. It works every time, and no, it is not a dye.
What does it taste like? +
Much gentler than it looks: lightly earthy, faintly green-pea and grassy, with no bitterness. It is a canvas, lemon and honey turn it into a bright, beautiful drink.
Does Mystic Blue have caffeine? +
None. It is a flower, not a tea leaf. Serve it to children, guests and insomniacs alike, usually in a clear glass, because the colour is the point.
Can I use Mystic Blue in drinks and mocktails? +
It is the best mocktail base in the range. Brew it strong, chill it, and layer it over lemonade for a purple gradient, or freeze it into ice cubes that turn a drink violet as they melt.
Is the blue colour safe? +
Entirely, it is the flower’s own pigment, the same natural family of compounds that makes blueberries blue and hibiscus red. Nothing is added.
