Chamomile is soft and honeyed, closer to a ripe apple than to a flower. It should taste like almost nothing at first, then settle into something warm and slightly sweet at the back of the mouth. How to Steep

Four steps from leaf to cup — the colour tells you where you are.

2g tea per 150ml/200ml cup

Water

Water at 100°C (straight off the boil for hot) or cold water (for iced cold brew).

Measure

2g per 150ml (Hot) or 2g per 200ml (Iced).

Brew

Steep 4–5 minutes (Hot) or fridge for 6 hours (Cold Brew). Whole flowers will not turn bitter if left to steep longer.

Enjoy

Strain. For iced, serve with a slice of apple. (Note: Most people prefer chamomile hot as a quiet evening drink.)

Does chamomile tea have caffeine? +
No. Chamomile is a flower, not a tea leaf, so it contains no caffeine at any point. This is why it is the standard last cup of the day, and why it suits anyone cutting caffeine entirely.
What does chamomile tea taste like? +
Soft, honeyed and faintly apple-like. Good chamomile is closer to warm fruit than to a flower. It should not be bitter. If yours tastes like hay or grass, it was crushed before it was packed, and the bitterness comes from the broken stem, not the flower.
Is chamomile tea the same as babunj? +
Yes. Babunj, written بابونج, is the Arabic name for the same flower. It has been drunk across the region for centuries, usually plain and usually in the evening. Same plant, same brew, different name.
How long should you steep chamomile? +
Four to five minutes with water straight off the boil. Whole flowers release slowly, so a short steep gives you a weak cup. Unlike black tea, you cannot over-steep it into bitterness. Leave it fifteen minutes if you like. It only gets stronger.
Can you drink chamomile tea every day? +
Most people do. It is a food, not a medicine. If you are pregnant, or you are allergic to ragweed, daisies or marigolds, speak to your doctor first, because chamomile belongs to the same family.
Why does some chamomile tea taste bitter? +
Because of what is in the bag. Teabag chamomile is milled flower and stem, and stem is where the bitterness lives. It brews fast, which is the point of a teabag, and it brews harsh. Whole flowers take five minutes and give you none of it.
