How to Steep
Four steps from leaf to cup — the colour tells you where you are.
2g tea
per 150ml/200ml cup
Water
Water at 100°C (for hot tea) or cold water (for iced cold brew).
Measure
2g per 150ml (Hot) or 2g per 200ml (Iced).
Brew
Steep 5–7 minutes (Hot) or fridge for 8 hours (Cold Brew). Longer steeping will not turn it bitter; it only turns it sharper.
Enjoy
Strain. For iced, serve over ice with a strip of lemon peel. (In a hurry: steep hot at double strength and pour straight over a full glass of ice.)

Does hibiscus tea have caffeine?
No. Hibiscus is a flower, not a tea leaf, so there is no caffeine in it at any point. You can drink it at midnight and sleep normally. That is what makes it the useful last cup of the day, and what makes it safe to pour for almost everyone at a table.
What does hibiscus tea taste like?
Tart and fruity. The closest references are cranberry and sour cherry, with a little rosehip behind them. It is sharp but never bitter, because there are no tannins in it to turn astringent. Sweeten it lightly if you want, or leave it dry and drink it cold.
Is hibiscus tea the same as karkadeh?
Yes. Karkadeh, written كركديه, is the Arabic name for the same flower, Hibiscus sabdariffa. Across Egypt, Sudan and the Gulf it is served iced at iftar and hot at weddings. Same plant, same brew, different name. If you grew up drinking karkadeh, this is that.
How do you make iced hibiscus tea?
Cold brew is the best method. Use 2g of whole flower per 200ml of cold water, leave it in the fridge for eight hours, then strain. Serve over ice with a strip of lemon peel. For a faster version, steep it hot at double strength and pour it straight over a full glass of ice.
Can you drink hibiscus tea every day?
Most people do, and have for generations. It is a food, not a medicine. If you are pregnant, nursing or taking blood-pressure medication, speak to your doctor before making it a daily habit.
Why is some hibiscus tea brown instead of red?
Because of what is in the bag. Most supermarket hibiscus is broken petal and stem, the fragments left after whole flowers are sorted out. Broken material oxidises, and oxidised hibiscus brews rust brown. Whole flower, dried slowly, brews ruby. Over-steeping does not cause this. Grade does.
